Recently I just needed some simple sauces to make with some pasta and extra additions, and generally I take the easy way out by using products like Pasta Sides etc., but this time I had none of that, so I searched for easy white sauces. Here is what I found.
For sauce, melt a tablespoon of butter in a pan.
Sauté an onion (garlic optional). Add a tablespoon of flour.
Now you have a roux (technically an onion roux).
Add 1/2 cup milk or a water-milk mix and you have an onion béchamel.
Or use 2 tablespoons each of butter and flour to 1 cup milk.
Grate in Parmesan cheese (or use the green can) and you have an Alfredo sauce.
Add bacon if desired. It's a fusion of Alfredo and carbonara.
Easy on the salt, heavy on the pepper.
Add extras (meatballs, canned chicken, tuna, etc.
or peas, spinach, kale, etc.) serve over rice or pasta.
